Impacts and Opportunities: a Pacific Coast Coalition - Dairy Business Innovation Initiative Perspective - Dr. Carmen Licon, Dr. Susan Pheasant
This dynamic duo will launch the morning's session as they lay out a vision for dairy processing in the western United States and share PCC-DBII opportunities for dairy businesses and students via capacity building grant funds, technical assistance, education, internships.

High-Pressure Procedure in Milk: A Promising Innovation for the Dairy Industry - Dr. Paulina Freire
Learn how High-Pressure Procedures (HPP) in milk is becoming a promising innovation with several advantages over traditional heat treatment methods. In particular, HPP treatment of milk has been found to be more efficient in preserving the nutritional quality and sensory attributes of the product, while also improving its microbiological safety.

Development of a High Protein Ice Cream - Daniel Hidalgo, Katherine Nathnia, Wonsun You
Learn about Fresno State student projects aim to create healthier dairy-based dessert and food products such as: 1) beers utilizing whey extract as a foundation, 2) a high protein ice cream using whey and casein protein, 3) a red ginseng yogurt for lactose intolerant consumers.

Pilot of the Fresno State Food Innovation Guild (FIG) - Dr. Sara Griffin
FIG is a student-operated food collaboration and product development center that allows local food entrepreneurs and industry partners to get valuable insight and consultation on their production issues and unique ideas from budding food science, culinary science, and human nutrition students at Fresno State.

California walnut growers are willing to pay more for disease-resistant rootstocks - Dr. Jason Liang
In a survey conducted during 2020 through 2021, California walnut growers revealed their willingness to pay higher prices for clonal walnut rootstocks with some disease resistance to offset concerns with crown gall and nematodes.

This Jordan College honors cohort student study analyzes the existence and the various factors that cause food insecurity even in places like Fresno, which is a highly productive agricultural region.

This proposed study will delve into the factors that most significantly contribute to price gouging in the food industry and its impact on customer behavior.

Learn how COOP courses meet critical training needs of the poultry industry workforce.

Explore the multidisciplinary aspects of the COOP courses as well as the potential for AI and extended reality (ER) to be used in education for students and industry members.

Learn about an industry member's journey and strategies in utilizing cross-disciplinary opportunities to impact job training for parents, teachers and students in the animal science field.

Hatching Bright Futures: How COOP Fuels Student Career Growth - Brenda Hernandez Tapia 
The Fresno State poultry science graduate student will highlight her experiences along with student strategies for participating in COOP-related student activities such as resume workshops, the San Joaquin Manufacturing Alliance Expo, and International Production & Processing Expo.

Pacific Coast Coalition - Dairy Business Innovation Initiative
Representing an intersection of innovation, production, and sustainability, the PCC-DBII employs pivotal strategies to engage in regional efforts translating to national impact in support of the dairy processing sector.  The PCC-DBII, hosted by California State Univesrity, Fresno, is part of the national effort launched by USDA-AMs to aid the dairy industry in focusing on innovating production and processing techniques of value-added dairy products for fun, flavor, and nutrition. We are working smarter together as mindful stewards of resources as we leverage higher education institutions, state dairy promotion programs, research organizations, and industry stakeholders, along with their respective networks and affiliations, to seek the shared goal of spurring regional innovation by assisting dairy businesses in developing higher value uses, diversifying markets and income, and realizing increased returns as well as building pathways to upskill and attract employees.
