Brief Introductory Statement:
Dr. Carlos Muller began his career at Fresno State in 1978 as
a Professor of Enology within the Enology, Food Science and
Nutrition Department in the Jordan College of Agricultural Sciences
and Technology where he served until 2000, when the Department of
Viticulture and Enology was created. In the Spring of 2004, after
participating in the FERP program through the university, Dr.
Carlos Muller officially announced his full retirement through the
Department of Viticulture and Enology. During his tenure he taught
enology courses, and was instrumental in developing the enology
program and obtaining approvals for the licensed, bonded winery in
1997. His areas of specialty include food chemistry and
biochemistry, emphasizing the biochemistry of flavor development;
vine physiology and defense mechanisms; wine quality, spoilage and
stability; and the health aspects of wine.
