Dr. Yiliang Cheng joined the Department of Viticulture and Enology at California State University, Fresno, as an Assistant Professor in August 2024. She holds a Ph.D. and M.S. in Food Science and Technology from Iowa State University, where her research focused on polyphenol reactivity and how viticulture and enology practices influence the chemical properties of red wines. Her work emphasizes improving wine quality through sensory evaluation and sustainable winemaking techniques, with a particular focus on addressing regional challenges, such as enhancing color stability and improving grape acidity in California.
