Shannon Birkner

Shannon is a graduate of the Kremen School of Education at Fresno State having earned her degree in 2000. She began a career in fundraising at Valley Children's Hospital before joining the Jordan College of Agricultural Sciences and Technology Development Team and the Ag One Foundation in 2012. Shannon also held the role of senior director of corporate relations at California Polytechnic State University, San Luis Obispo, where she developed a corporate engagement program and fostered industry partnerships. Currently, as the executive director of the Ag One Foundation and with a background in agriculture, higher education and non-profit work, she looks forward to strengthening existing philanthropic relationships to support and advance the Jordan College at Fresno State. In her spare time, Shannon enjoys woodworking, off-roading and camping.
 

 


 

Lauri King

Lauri graduated from California Polytechnic State University, San Luis Obispo with a Bachelor of Science degree in animal science. She also earned a minor in Agricultural Communications and Agribusiness. Lauri has over 25 years of experience working in the Fair Industry and has contributed to the growth and development of numerous programs within the industry. Currently, she is a member of the development team at Jordan College, where she utilizes her passion and enthusiasm to help make a good education a great education. Most of all Lauri loves being a wife to her husband Andrew and a mom to her 3 children.

 


 

Kristine Lor

Kristine is a dedicated accounting professional responsible for all aspects of financial reporting, analysis and documentation. She also leads the administrative efforts, overseeing interns and student assistants, while also managing the clerical, technical and professional activities of Ag One. She graduated from Front Range Community College in 1995 with an Associate's Degree in Business Administration. 

 


 

Rachel Coelho Borges

Rachel Coelho Borges graduated from Fresno State in 2019 with a Bachelor of Science degree in Agricultural Communications.  During her tenure as a student at Fresno State, she was the student assistant here at Ag One, a member of the FFA Field Day Committee, and volunteered with the Dairy Science Program to assist with communications.  Upon graduating she worked at the California Table Grape Commission, where she was the Assistant Director of Marketing, Social Media and Influencers.  After that, she went on to work in agricultural real estate at Pearson Realty before returning to Ag One, now as the Program Specialist.  Rachel's family farms almonds in Turlock, California and her husband farms citrus in Sanger, California, therefore she feels passionate about promoting and supporting the agriculture industry.

 

 

 


 

Erica Mattingly

Erica was born in Sonora, California, and raised in Turlock, California, where her passion for the agriculture industry developed. She earned her Associate of Science degree in agricultural sciences from Modesto Junior College in the Spring of 2023. Her career at  Fresno State began in the Fall of 2023, She earned a bachelor's degree in agriculture education major with a concentration in plant science in Spring 2025. Erica has earned the opportunity to pursue her Master's Degree with the support of the Harvey Graduate Scholarship. With this, her career goal is to become an agriculture educator with a specialization in environmental horticulture and floriculture. She joined the Ag One/Jordan College Development team in May of 2023.
